Gulai Ikan Tongkol Lauk Nasi Dagang
Ingredients
- 500g tuna fish (Ikan Tongkol)
- 1 cup coconut milk
- 2 cups water
- 2 stalks lemongrass (sliced thinly)
- 3 kaffir lime leaves
- 3 green chillies (sliced lengthwise)
- 2 red chillies (deseed and sliced lengthwise)
- 1 tomato (quartered)
- 1 teaspoon salt
- 1 teaspoon tamarind paste
Instructions
- Heat a little oil in a pan, then sauté the sliced lemongrass until fragrant.
- Add in the tuna fish and cook until lightly browned, then remove and set aside.
- In the same pan, add in the sliced chillies, kaffir lime leaves and quartered tomato, and sauté until the tomato is soft and fragrant.
- Add in the coconut milk and water, and bring to a boil.
- Once boiling, add the tamarind paste and salt, then reduce the heat and let the curry simmer for 10 -15 minutes.
- Add back the tuna fish into the curry gravy, and continue cooking until the gravy has thickened and the fish is cooked through.
This dish is best served with Nasi Dagang, a fragrant rice dish typically made with coconut milk and pandan leaves.
