Bumbu Ikan Bakar Sederhana
For this recipe you'll need:
- 1 whole fish (we recommend using sea bass, snapper or mackerel)
- 2 cloves garlic, minced
- 2 tbsp lime juice
- 1 tsp salt
- 1 tsp sugar
- 1 tsp ground coriander
- 1/2 tsp ground turmeric
- 6 shallots, thinly sliced
- 2 red chillies, thinly sliced
- 2 tbsp oil (preferably coconut oil)
- Banana leaves (optional)
How to Make It
Clean the fish and cut it open along the belly, then rinse it until clean and pat dry. In a bowl, mix together the garlic, lime juice, salt, sugar, ground coriander and turmeric. Rub the fish thoroughly with the mixture, both inside and out, making sure it's well coated. Allow the fish to marinate for at least an hour, preferably overnight for maximum flavor.
In a pan, heat up the oil and fry the shallots and red chillies until fragrant and lightly browned. Transfer them to a bowl and set aside.
Preheat your grill. If you're using banana leaves, lay them out on the grill and place the fish on top, bringing the edges of the leaves up and over the fish to wrap it up. Alternatively, place the fish directly on the grill. Grill the fish for 8-10 minutes on each side, until the flesh is cooked through and lightly charred.
To serve, carefully open up the banana leaves or transfer the fish to a platter. Top with the fried shallots and red chillies. Enjoy with steamed rice and your favorite veggies.

How to Make It
In a blender, combine all the ingredients for the spice paste and blend until smooth. In a pan, heat up the oil and fry the spice paste until fragrant and cooked through. Add the kaffir lime leaves, lemongrass, tamarind juice, salt and sugar.
Place the banana leaves on a flat surface and spoon some of the spice paste onto each one. Place the fish on top of the paste, then spoon more paste over the fish. Fold and seal the banana leaves into a neat packet using toothpicks or string.
Steam the pepes ikan kembung for about 30 minutes or until cooked through. Open up the packets carefully and transfer the fish to a platter. Serve with steamed rice and your favorite veggies.
