When it comes to cooking, there's nothing quite like the comforting flavors of traditional Asian dishes. One of my all-time favorites is Ikan Masak Lemak Cili Api, a creamy and spicy fish stew that's bursting with flavor. Today, I'm excited to share my own recipe for this delicious dish, inspired by the image and recipe I found online.
Ikan Masak Lemak Cili Api Recipe:
Ingredients:
- 500g of mackerel or any white firm fish, cut into chunks
- 1/2 cup of coconut cream
- 1/2 cup of water
- 2 stalks of lemongrass, bruised
- 1/2 cup of tamarind juice
- 3-4 kaffir lime leaves, torn
- 1 turmeric leaf, torn (optional)
- Salt to taste
Spice Paste:
- 8 shallots, peeled
- 4 cloves of garlic, peeled
- 6 dried chillies, soaked in hot water
- 4 fresh red chillies
- 2cm piece of ginger, peeled and sliced
- 1 stalk of lemongrass, sliced
- 1 teaspoon of shrimp paste
Instructions:
- Blend together all spice paste ingredients until smooth.
- Heat oil in a pot, add in the blended paste and stir-fry until fragrant.
- Add in the lemongrass, kaffir lime leaves, turmeric leaf (if using) and stir-fry for another minute.
- Pour in the coconut cream and water, and bring to a boil.
- Reduce the heat to low and simmer for about 5 minutes.
- Stir in the tamarind juice and salt to taste.
- Add in the fish chunks and let simmer for another 10 minutes, or until the fish is cooked through.
- Serve hot with steamed rice.
Masak Lemak Cili Api Ikan Kembung Recipe:
For those who prefer a slightly different version of this dish, you can also try Masak Lemak Cili Api Ikan Kembung, a similar fish stew recipe but made with mackerel. Here's my take on this flavorful dish:
Ingredients:
